BACON WRAPPED CHICKEN BREASTS

Choose boneless and skinless chicken breasts about six inches long.
Cut them in half crossways to square them up… slit them to create a pocket and stuff the pocket with cheese. I use a three cheese blend (mozzarella , parmesan and Swiss). I’m sure straight Swiss or Gouda would be fine as well.
Wrap the chicken breasts with bacon, sprinkle with salt, pepper, paprika, sage and lemon juice. Put them in the fridge for a couple of hours to marinate.
Bake in a 350 degree oven for approximately one hour .. (until the bacon is cooked).
For a side dish, serve with white rice with peas mixed in; mashed potatoes; or stuffing.
I served them with stuffed bacon skins when I did them originally.
