ZUCCHINI LOAF

Mix together:

2 ½ cups flour
½ tsp salt
2 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 tsp cloves

 Beat together and add:

3 eggs
1/2 cup oil
1 cup sugar
1/2 cup lemon juice
1/2 tsp almond extract

Mix together and bake at 350 degrees for one hour.

 

          ZUCCHINI CARROT CAKE

1 cup whole wheat flour
1 cup all-purpose flour
2 ½ tsp cinnamon
2 tsp baking soda
¾ tsp nutmeg
¼ tsp cloves
½ cup buttermilk
1 cup unsweetened applesauce
1 ½ cups shredded carrots
½ cup shredded zucchini
1 tsp vanilla extract
6 egg whites
1 1/3 cup sugar

In large bowl, combine first six ingredients.  Gradually add buttermilk, applesauce, carrots, zucchini and vanilla.  In small bowl beat egg whites until soft peaks form; gradually beat in sugar a little at a time; gently fold into batter.

Pour into 13 x 9 x2 pan coated with non-stick spray.  Bake at 350 degrees for 35 – 40 minutes or until done.
