Pickled Green Tomatoes

This is so great now with all the tomatoes available.

2 1/2 pounds small green tomatoes
1 large onion
1 garlic clove, minced
1/2 stalk celery - diced
Brine:  1 cup water to 1/2 cup vinegar
1 tablespoon salt

Wash tomatoes and cut each into 4 wedges.  Place in large, sterile jar along with onion, garlic and celery.  Add brine, leaving an inch or two at the top of the jar.  Top with salt.  Refrigerate after 48 hours.
