Texas Chili

(Mr. Page's Revised Chili)

This recipe was passed down from my Great-Grandfather.  Was a favorite on the cattle drive trail. (It has been modified for current ingredients.)

 

 

  Amt      Measure                 Ingredient -- Preparation Method

  2            pounds                  beef or venison -- coarsely ground

  1            tablespoon            oil

  2            teaspoons             ground cumin

  4            tablespoons          chili powder (depending on how hot you like it)**

  4            tablespoons          minced garlic (or amount to taste)

  1            tablespoon            salt

  2            tablespoons          flour

     1/4      teaspoon               pepper

  3            cups                       water -- (can substitute part beer)

 

Brown beef and garlic in hot oil.  Cook slowly for about 15 minutes.

Mix all dry ingredients together.  Add to meat mixture.

Stir in water.

Cook for 35 minutes or longer. (I cook slowly for about 2 hours.)

 

I double this recipe and freeze part for later.

 

Serve with pinto beans on the side.  Add as desired.

 

**I use a small bottle of Gebhardt's Chili Powder, but it is not available in all areas

 

Condiments on the side:  Grated Cheddar Cheese; Sour Cream; Chopped Onions; Fritos
