Cornmeal Mush
- Add cornmeal and salt to cold water.
- Bring water/cornmeal mixture to a boil, stirring with spatula to keep the cornmeal from sticking to the pot bottom.
- Simmer for 2 minutes, continuing to stir. Protect stirring hand from spatter using cozy cloth or glove.
- Cover pot, wrap pot in cozy, and allow to stand for at least 15 minutes.
Cornmeal mush is versatile. It can be served for breakfast, lunch, or dinner, and condiments can be added to it to take it in either a sweet or salty direction.
