Marinated Tofu (tofu)
  1. Put tofu on dinner plate, put smaller plate on top, weight top plate with book, and let water squeeze out for one-half hour.
  2. Drain tofu, chop into 3/4-inch cubes, put in plastic bag or tupperware, add enough soy sauce to wet all pieces, grate ginger on top, and marinate for one hour, turning occasionally to mix.
  3. Preheat oven to 375 degrees.
  4. Add toasted sesame oil to marinade, mix well to coat tofu with oil, then put tofu on baking pan oiled with canola oil.
  5. Bake tofu for about 30 minutes, turning often in order to brown evenly.

Serve with Steamed Vegetables and Brown Rice.
