Marinated Tofu (tofu)
- Put tofu on dinner plate, put smaller plate on top, weight top plate with book, and let water squeeze out for one-half hour.
- Drain tofu, chop into 3/4-inch cubes, put in plastic bag or tupperware, add enough soy sauce to wet all pieces, grate ginger on top, and marinate for one hour, turning occasionally to mix.
- Preheat oven to 375 degrees.
- Add toasted sesame oil to marinade, mix well to coat tofu with oil, then put tofu on baking pan oiled with canola oil.
- Bake tofu for about 30 minutes, turning often in order to brown evenly.
Serve with Steamed Vegetables and Brown Rice.
