Potato Salad With Mustard Vinaigrette (vpsal)
  1. Peel the potatoes, (or leave the skins on and wash and scrub them well), then cut them into bite-sized pieces.
  2. Put the potatoes into a pot, cover them with water, bring the water to a boil, and cook the potatoes until tender, but still firm (about 15 minutes).
  3. Drain and rinse the potatoes.
  4. Toss the potatoes with the parsley, onions and celery.
  5. Mix the olive oil, vinegar, and mustard. Then pour this vinaigrette over the potatoes and mix in.
