Potato Salad With Mustard Vinaigrette (vpsal)
- Peel the potatoes, (or leave the skins on and wash and scrub them well), then cut them into bite-sized pieces.
- Put the potatoes into a pot, cover them with water, bring the water to a boil, and cook the potatoes until tender, but still firm (about 15 minutes).
- Drain and rinse the potatoes.
- Toss the potatoes with the parsley, onions and celery.
- Mix the olive oil, vinegar, and mustard. Then pour this vinaigrette over the potatoes and mix in.
