Almost 0-point Pesto

Ingredients

4-6 Cloves Garlic
2 packed cups Basil leaves
3/4 Cup or more Trader Joe's marinara sauce (or other 0-point tomato sauce)
5 tbs Cup Pine Nuts
8 Sun-dried tomatoes

Instructions

1. Clean basil and removes stems.
2. If sun-dried tomatoes are dry, soak them in hot water for several minutes to
re-constitute.
3. Combine all ingredients in a food processor or blender in the following
order:
· Garlic and pine nuts
· Sun-dried tomatoes
· Basil and a little tomato sauce to moisten
· Enough tomato sauce to make a paste-like consistency.

Special Notes
This makes about 2 cups. 3 tbs on 1 cup of pasta is a very generous serving, and
contains about a half tablespoon of pine nuts which is about a half point. Since
there's no cheese in this pesto, I served it with grated par
mesan which is about
a point per tablespoon. I can't say that I miss the olive oil at all.
