Berry Cake
1 egg white
3/4 cup sugar
1/3 cup of butter
margarine
1 tsp vanilla
extract
1/4 tsp salt
1 egg, separated
1+1/2 cups
all-purpose flour
1 tsp baking powder
1/3 cup fat-free
milk (water works ok too)
2 cups of mixed
berries or just blueberries
1 tbsp flour.
Preheat oven to
350F. Coat a 9" x 9" baking pan with cooking spray
In a large bowl,
with an electric mixer on
medium speed, beat the egg
white
until stiff. Add 1/4 cup of the
sugar and beat until smooth.
In another bowl, with the mixer on
medium speed, beat the butter or margarine,
vanilla extract, salt, and the
remaining 1/2 cup sugar until creamy. Add the
egg yolk and beat to incorporate.
Add 1+1/2 cups of flour, the baking powder,
milk and egg white.
Beat until thoroughly combined.
Coat the berries
with the remaining 1 tablespoon flour and add to the batter.
Pour into the
prepared pan.
Bake for 40 minutes,
or until a wooden pick inserted in the center comes
out
clean.

points I use Weight Watchers margarine (which bakes good), only
1 egg, water instead
of the fat free milk, and cut the cake in 16 pieces. I
calculated it to come
to about 1.85 pts this way.
