Black Bean Brownies
1 15 ounce can black beans
19.5 ounce box brownie mix
(I used Krusteaz Low Carb Brownie Mix, 16 oz.
box, was just fine!)
Dump the entire can of black
beans in a food processor/blender. Puree the heck
out of them, totally liquefy them, when they
are liquid -- puree them a little
more to be sure. Be sure they are liquefied so
that the brownies don't come
out
grainy.
Mix with the brownie mix, pour into a 9x13 pan
and bake according to package
directions. I used Pam cooking spray, they did
not stick. I also used a 9x9x3
dish. Others have made muffins......your
choice!
I then cut my pan into 16 equal sized brownies,
cooled and then wrapped into 16
individual servings. Perfect for lunches or
late night snacks.
