Cappellini Pomodoro
Diana's version of an
Olive Garden favorite
Notes: This is perfect if you are looking for a light dish.
Ingredients:
2 cloves Garlic minced
2 cans Petite Diced Tomatoes
1/4 tsp. Pepper
1 oz. Fresh basil leaves minced
1 tablespoon Ex-virgin olive oil
1 tablespoon Balsamic Vinegar
3 oz. Parmesan cheese, grated
12 oz. Dry angel hair pasta cooked
Preparation:
Heat olive oil and add garlic; cook until it turns white. Add minced basil. Add
tomatoes and pepper. Simmer about 15 minutes. Stir in Balsamic
Vinegar. Remove from heat. Transfer hot, cooked pasta to large bowl. Toss
pasta gently with tomato mixture and half of Parmesan cheese. Serve immediately
and pass remaining Parmesan.
