Chicken Puttanesca

1 (14.5oz.) can diced tomatoes
2 garlic cloves, minced
6 Kalamata olives, pitted and coarsely chopped
2 Tblsp. Tomato paste
2Tblsp. Red wine vinegar
½ Tblsp oregano
¼ tsp. salt
¼ tsp. pepper
4 (4oz.) skinless, boneless chicken breast halves pounded thin
11/2 Tblsp Italian-seasoned breadcrumbs
Cooking spray
1Tblsp olive oil

Combine first nine ingredients, set aside.
Coat chicken with breadcrumbs (coating will be light) Heat oil in a
large nonstick skillet coated with cooking spray over
medium high heat
until hot. Add chicken, and cook 5 min on each side or until golden
brown. Pour tomato mixture over chicken,cover reduce heat and simmer
15 min or until chicken is done.
4 servings 1chicken breast and 1/3 cup sauce.

I make angel hair and add ½ cup and then put the sauce on it and the
chicken on top
Adds 2 points!!


P.S.   Don't skimp on the olives, even if you don't like them, they give
the dish it's flavor and they don't taste like any olives I have ever
had before!! Trust
