1 (14.5oz.) can diced tomatoes
2 garlic cloves, minced
6 Kalamata olives, pitted and coarsely chopped
2 Tblsp. Tomato paste
2Tblsp. Red wine vinegar
½ Tblsp oregano
¼ tsp. salt
¼ tsp. pepper
4 (4oz.) skinless, boneless chicken breast halves
pounded thin
11/2 Tblsp Italian-seasoned breadcrumbs
Cooking spray
1Tblsp olive oil
Combine first nine ingredients, set aside.
Coat chicken with breadcrumbs (coating will be
light) Heat oil in a
large nonstick skillet coated with cooking spray
over
medium high heat
until hot. Add
chicken, and cook 5 min on each side or until golden
brown. Pour tomato
mixture over chicken,cover reduce heat and simmer
15 min or until chicken is done.
4 servings 1chicken breast and
1/3 cup sauce.

I make angel hair and add ½ cup and then put the
sauce on it and the
chicken on top

Don't skimp on the olives,
even if you don't like them, they give
the dish it's flavor and they don't taste like any
olives I have ever
had before!! Trust
me!!
