Chocolate Mud Cake

1/3 cup unsweetened cocoa -- powder
1/3 cup water -- hot
5 1/4 oz unsweetened baking chocolate square(s) -- dark, melted
1 1/4 cup unpacked brown sugar
3 1/2 oz ground almonds
4 large egg(s) -- separated
2 Tbsp powdered sugar -- sifted
5 1/4 oz light butter -- melted

Preheat oven to 325ºF. Coat an 8-inch square cake pan with cooking spray.

In a large bowl combine cocoa and water. Stir until smooth. Add chocolate, butter, sugar and almonds. Stir in egg yolks one at a time.

Beat egg whites with an electric mixer until soft peaks form. Gently fold egg whites into chocolate mixture.

Pour batter into prepared pan and bake until cooked, about 1 hour and 15 minutes. Remove cake from pan and dust with powdered sugar. Cut into 12 pieces to serve.
