Cranberry
Walnut Brown Rice Salad

2 cup cooked brown rice
1/2 cup dried cranberries -- sweetened
11 oz canned mandarin oranges in light syrup -- drained
1/2 cup chopped walnuts
2 medium scallions -- chopped
2 Tbsp vinegar -- preferably sherry
vinegar
2 tsp olive oil
1/2 tsp table salt
1/4 tsp black pepper -- ground
In a large bowl, combine rice, cranberries, oranges, walnuts and scallions. Toss
to combine.
In a small bowl, whisk together vinegar, oil, salt and pepper. Add dressing
mixture to rice mixture and toss to combine. Yields about 2/3 cup per serving.
