Edamame Salad
(Soy Bean Salad)

Serving Size  : 5 servings
1/2 cup = 4 points (without pine nuts = 3 points)

16 ounces  frozen shelled Edamame (soy beans)
3 medium  Roma tomatoes -- chopped
4 green onions -- thinly sliced
1 tablespoon  Extra Virgin olive oil
1 tablespoon  Balsamic vinegar
1 ounce  parmesan cheese -- grated
Salt and pepper -- to taste
2 tablespoons  pine nuts -- toasted (optional)

In Microwave:  Place Shelled Edamame in a microwave-safe pie plate.  Cover with vented plastic wrap and microwave on HIGH (100%) power for 5 minutes.  Run under cold water until cool.

Put beans in a medium-sized bowl.  Add tomatoes, green onions, olive oil and vinegar.  Toss gently. Season with salt & pepper to taste.  Add grated parmesan cheese and toasted pine nuts and toss gently.

Serve 1/2 cup on top of lettuce greens.
