FRITTATA

Servings: 4 for 2 Points per serving

1 large potato (or two small), sliced thinly ( I left the skins on)
1 cup asparagus, cut up
6 mushrooms cut up fine
1 onion diced finely 
handful of diced green pepper 
2 eggs + 2 egg whites + splash of skim milk (can also use water) 
2 tbsp low fat parmesan cheese 
salt and pepper to taste (cheese adds flavor so no need to add much salt) 
2 cloves of fresh garlic - crushed 
Non stick Spray  

Steam ( I boiled them) potato(s) and asparagus, set aside.  Saute rest of veggies with garlic and S&P  in 10" non stick frying pan sprayed with Pam (or equivalent) until tender.  Add potatoes and asparagus to pan and saute for a few more minutes.  Turn to medium low and add egg mixture (beat eggs and milk - I added a little more black pepper).  Cover and simmer until egg starts to get firm.  At this point you can either cut it up and flip it to brown the other side or put it under the broiler and broil till golden and firm.

Split in 2 for 4 points each or into 4 for 2 points each!!!
