Fruit Glazed Chicken
1 tsp. oil
1/2 C chopped red onion
1-1/2 tsp fresh thyme or 1/2 tsp dried thyme
4 small boneless breast halves
1/3 C. seedless AllFruit (raspberry is best, but any kind is good)
2 Tbsp balsamic vinegar
1/4 tsp pepper
Cooking Spray
Spray nonstick skillet. Heat oil over M-H heat. Add onion; saute 5 minutes.
Sprinkle chicken with thyme and 1/4 tsp. slt. Saute 6 minutes each side (last
night I did the chicken on the George Forman indoor grill and let the fat go
into the drip pan). Remove chicken and keep warm. Reduce heat to M-L. Add 1/4
tsp salt, allfruit, vinegar, pepper. Stir until preserves melt. Spoon over
chicken.
