Mom's Ham & Tomato Soup
Makes
approx. 10 cups, half a large pot
3 cups (15
oz) cooked ham, cut into a large dice
1 onion,
chopped
1 1/2 c.
frozen corn
1 lg can
peeled Italian-style whole tomatoes
2
medium
red potatoes (300 grams) cut into 1 inch dice (peel, if you like)
1 T soy
sauce
1 t. sugar
1 t. salt
1 t.
Tabasco pepper sauce
3 c.
fat-free chicken or vegetable broth
Squeeze
the tomatoes between your fingers to shred them into an
interesting texture. Resist the temptation to use sliced, cut, or
crushed
tomatoes--one of the best features of it is the rustic
texture.
Place all
ingredients in a large soup pot and simmer
together for 30
minutes or
until the potatoes are tender and the flavors are blended.
Side dish:
1 cup = 2.5 pts.
Main dish:
2 cups = 5 pts.
