CRAZY/COCKEYED CHOCOLATE CAKE (& Frosting)

Heat oven 350

We had small pan recipe years ago, made without frosting. Kristi's larger pan version is almost exactly doubled (except for vanilla) and she has frostings!

8 x 8 or 9 x 9 pan greased (GKB)

l l/2 c sifted flour
l tsp soda
l/2 tsp salt
3 TBS cocoa
l c sugar
1 tsp vanilla
1 TBS vinegar
5 TBS salad oil
1 c water

9 x 13 pan greased (Kristi)

3 c. sifted flour
2 tsp. soda
1 tsp. salt
1/3 c. cocoa
2 c. sugar
1 tsp. vanilla
2 Tbsp. vinegar
3/4 c. salad oil
2 c. water


Put sifted flour back in sifter, add other dry ingredients; sift right into greased pan. Make three holes in pan; into pour oil into one, vinegar into one, vanilla into one. Now pour cold water all over it all. Beat it with spoon until smooth and you can't see the flour. Bake 350 for 30 (small pan) 30-40 (large pan) minutes.

It's good without frosting - but if you want some, see below.

Chocolate Frosting (Doris)

1/4 - l/2 cup margarine/butter
1/4 cup milk
1 cup sugar
1/4 to 1/2 tsp salt
1/2 cup chocolate chips
1 tsp vanilla

Combine margarine, milk, sugar and salt in sauce pan. Bring to full boil and then boil for 1 minute more.* Add choc chips. Stir briskly while cooling the pan in cold water. Add vanilla. If too firm, add 1/4 tsp of milk.

Chocolate Frosting (Mary) No butter, more milk, more chips,less vanilla

She says becomes firm and fudgy when set.

1/3 c. milk
1 c. sugar
1/4 tsp. salt
3/4 - 1 c. chocolate chips
1/2 tsp. vanilla

Combine milk, sugar and salt in small saucepan. Bring to a full rolling boil.* Remove from heat and add choc chips. Place pan in sink of cold water (2 inches or so) and beat to spreading consistency. Add vanilla.

*Kristi says: I don't boil either a full 3 minutes as make it "sugary" in texture. Just bringing it to a boil and then removing from the heat - seems to work in both recipes. I usually have a pan of water with ice standing by to cool it down while I mix in the chips.
