GKB's "Satay" (w/tomatoes)

Note: You can add boned cooked chicken or cooked shrimp but we usually just eat it as is on rice.

Make rice

2 cups water
6 cloves chopped garlic
15 oz can stewed tomatoes
1 large onion*
1 or 2 green or red/etc. bell peppers *

*chopped in large chunks (approx 1 inch)

Simmer about 10 minutes

Then add:

1 - 1 l/3 cups peanut butter (chunky or plain)

Heat & stir 'til thick; remove from heat and add:

l/4 C brown sugar
3 TBS lemon juice
2 TBS soy sauce
1 tsp Sambal** a.k.a. chili paste

Salt to taste

Serve on rice (or add cooked chicken/shrimp and serve on rice).

**Not optional; this is a Thai type dish and needs the "hot".

Sambal is a fiery Indonesian condiment sold in stores carrying Asian ingredients (in Hawaii, it can be found at Safeway in the Chinese food section).

FYI, here's a recipe for Sambal (a.k.a. chili paste):

l/2 c small dried whole hot red chilies/ stemmed & seeded
2 cloves garlic, halved
1 small onion, coarsely chopped
l/4 cup EACH sugar, lemon juice, and water
l/2 tsp salt

Blend all items in blender/processor until onions are finely minced.

Cook over medium heat, stirring occasionally, until reduced to about l/2 cup (about 10 minutes). Serve at room temp.
