JAYNE'S TURKEY SAUSAGE
This is very tasty and very low fat and an easy recipe to play with. For example, we added the seeds. But it's good even if you don't have (or like) the seeds. If you like hot sausage - add paprika and cayenne. Mexican sausage? Add cumin. And so on. You might want to add a chopped apple, and/or onion, and/or onion powder.
For Weight Watchers the only thing in the basic recipe that counts is the turkey - you can figure that one ounce of cooked sausage is one point. Your cooked patties will probably be 3-4 oz. Weigh them to be sure.
BASIC RECIPE
1 - 1 l/2 # ground turkey
1 tsp. salt
l/2 tsp. pepper
1 Tbs. garlic powder
1 Tbs. Poultry seasoning (we make our own - see below*)
Dash nutmeg (or grating of fresh nutmeg)
Juice of 1/2 lemon (or grating of rind of 1/2 lemon)
1 Tbs. fennel seeds and/or mustard seed (optional)
Mix all ingredients and refrigerate over night.
Make patties and fry using Pam or other non-stick spray.
If you want to add sausage to some other recipe you can cook it crumbled (like when you brown hamburger for spaghetti sauce or whatever.)
The original recipe said to simmer them in water - that would result in a soft sausage - but we like them crispy and never bother with that.

1 tsp. sage
1 tsp. sweet marjoram
1 tsp. thyme
1/2 tsp. summer savory
