Mango Bread (via PJB)

Combine/mix in large bowl:

2 cups unsifted flour
1 cup sugar
2 tsp. baking soda (be sure this is mixed in well)
2 tsp. cinnamon
1 tsp. salt

Make a well in dry ingredients and add:

3/4 cup vegetable oil
3 eggs
2 cups finely chopped mangos
1 tsp. vanilla

Optional - l/2 cup nuts and/or l/2 cup raisins

Mix well. Pour into two well-greased and floured loaf pans. Bake at 325o for about 1 hour.
