Yummy Chicken from Karie
SOY SAUCE CHICKEN WINGS (OR WHATEVER)
1 pkg chicken wings (or legs)
1 l/2 C water
5 star anise
1 piece ginger root (3/4" thick) crushed
l/2 C dark soy sauce
l/2 C thin soy sauce
1 TBS white wine (optional)
1 C brown sugar
1. Clean chicken.
2. In 2 qt. pan bring water to boil; add anise and boil for 10 min. There should be at least 1 cup of liquid remaining.
3. Add all remaining ingredients EXCEPT chicken and bring to a fast boil.
4. Add chicken, cover and cook for 10 min. more. Turn off heat and let stand (covered) for 1 hr.
Cook is a little longer for bigger pieces of chicken. Dar soy sauce is usually just thicken. I've even used all regular soy sauce. Yummy!
NOTE: You can use the sauce several more times

I couldn't find star anise, I didn't have ginger or wine. I had one type of soy sauce. I had 4# of defrosted boneless skinless chicken thighs that just had to be cooked. I modified the above. Bro't 1 cup water and about 1/4 tsp. of Chinese Five Spice to a boil, added soy and sugar, bro't to a boil, added chicken. Followed rest of recipe. This was pretty darn good!
