Be interesting to try making "bread" with persimmons a la the below bread - and vice versa

Mango Bread (via PJB)

Combine/mix in large bowl:

2 cups unsifted flour
1 cup sugar
2 tsp. baking soda (be sure this is mixed in well)
2 tsp. cinnamon
1 tsp. salt

Make a well in dry ingredients and add:

3/4 cup vegetable oil
3 eggs
2 cups finely chopped mangos
1 tsp. vanilla

Optional - l/2 cup nuts and/or l/2 cup raisins

Mix well. Pour into two well-greased and floured loaf pans.

Bake at 325o for about 1 hour.

Moister, saltier

Rose's Persimmon Cookies

Combine: 

2 eggs
1 cup lard or margarine
2 cups sugar|
2 cups persimmon pulp with 2 tsp. baking soda added

Add:

4 cups flour
2 tsp. cinnamon
2 tsp. cloves
1 tsp. nutmeg
2 cups walnuts
2 cups raisins and/or dates

Bake for 20 minutes at 3750
