Cheddar Chive Muffins
The most requested recipe after a recent faculty coffee hour.

1-1/4 cups milk
3/4 cup mashed potato flakes
1 egg
1/3 cup vegetable oil
1 cup (4 oz) shredded cheddar cheese
1-2/3 cup flour
3 Tbls sugar
2 Tbls snipped chives
1 Tbls dried parsley
1 Tbls baking powder
1 tsp salt

In sauce pan, bring milk to a boil. Remove from the heat, stir in potato flakes and let stand for 2 minutes.Whip with a fork until smooth and cool slightly. Beat in the egg, oil and cheese.

Combine rest of the ingredients. Stir them into the potato mixture just until moistened (batter will be thick). Fill greased muffin cups 3/4 full. Bake at 400 for 20 minutes or until they test done.

Cool for 5 minutes and remove from pan to wire rack. Serve warm. Yield 1 dozen.

Note: Bottoms tend to brown quickly so be sure to bake in middle of oven.
