Mash the grains with 2.25 gallons of water at 151F for 70 minutes. Sparge with 5.25 gallons of 175F water to
collect 6.5-7 gallons of wort. Boil the wort for 60 minutes, adding the hops as indicated. Cool the wort to 70-75F,
rack into the fermenter, and pitch the yeast.
This is a great session ale &mdash flavorful, easy-drinking, and barely 4% ABV. It has a surprising amount of
body given its low starting gravity, and its nicely balanced by the hops. You may want to experiment with the hop
schedule to find a level that fits your taste.
This is a good beer to make when you need to get some homebrew ready in a hurry — you can go from brew kettle to first pint out of the keg in as little as 8 days.
Primary fermentation: 5 days
Secondary fermentation: 7 days
Starting Gravity: 1.038-1.041
Finishing Gravity: 1.008-1.011
