Mash the grains with 2.75 gallons of water at 151F for 70 minutes. Put the hops
in the brewpot and sparge with 5.25 gallons of 175F water to collect 6.5-7 gallons of wort.
Boil the wort for 60 minutes. Cool the wort to 70-75F, rack into the fermenter, and pitch the yeast.
This is the perfect beer to share with your mega-brew-drinking buddies. Its very light in color and flavor, but it also has some flavor complexity provided by the hops and flaked maize. You could also make slightly more robust beer by replacing the maize with another pound or two of pilsner malt and a pound of munich malt. Any noble German hop, or its American counterpart, can be used.
Primary fermentation: 7 days
Secondary fermentation: 7 days
Starting Gravity: 1.047-1.051
Finishing Gravity: 1.007-1.011
