Mash the grains with 3.5 gallons of water at 151F for 70 minutes. Sparge with 5 gallons of
175F water to collect 6.5-7 gallons of wort. Boil the wort for 60 minutes, adding hops as indicated.
Cool the wort to 70-75F, rack into the fermenter, and pitch the yeast.
This beer is definitely for people who appreciate a strong, full-flavored brew. It has a forceful hop character, but it emphasizes flavor over bitterness, and it is also well balanced by the malt. Desert Solitaire tips the scales at about 7% alcohol by volume. The Amarillo hops can be replaced by any big American variety, from the traditional citrusy ones (Chinook, Centennial, Columbus, Nugget) to the newer types (Simcoe, Warrior, Tomahawk).
Primary fermentation: 7 days
Secondary fermentation: 7 days
Starting Gravity: 1.064-1.068
Finishing Gravity: 1.010-1.014
