Mash the grains with 3.25 gallons of water at 151F for 70 minutes. Sparge with
5 gallons of 175F water to collect 6.5-7 gallons of wort. Boil the wort for 60 minutes,
adding hops as indicated. Cool the wort to 70-75F, rack into the fermenter, and pitch the yeast.
This beer hits you with a series of robust flavors. The initial flavor is full of chocolate malt overtones, followed (and balanced) by a healthy hop flavor and bitterness. It can be quite strong in the first few months after bottling, but over time the flavors will mellow out and deliver a perfectly balanced yet still robust porter.
I have used Galena, Chinook, and Nugget as bittering hops, and they all worked just fine. If you want to simplify the grain bill, you can replace the flaked barley with more carapils and the victory malt with more vienna malt (or vice versa).

Starting Gravity: 1.051-1.054
Finishing Gravity: 1.010-1.013
