Over time when we humans stopped following the herds and settled down we started to make all kinds of cheese. There are over 1000 different varieties in the world today. How these varieties came about is a unique process. Each of the different areas of the world have their own different bacteria that was unique to that are. Also it depended on who made the cheese. Was it the wife or was it a village cheese maker. For example, French cheeses were made by the wives. The kind of cheeses that they made were cheeses that fit into their schedule. It required no heating (They did not cool the milk after they milk the animals) and not a lot of work. Alpine cheeses were made by a village cheese maker who specialized in just making cheese. Since they were in the high Alps in the summer it was hard to get a lot of salt up there. They figured out that by making a very small curd size and heating it, it allowed the whey to be expelled out and it also made the holes in their cheese. So each geographic area of the world has it own cheese because of their own particular environment.

 

For a quick easy snack or mid day meal:

Peanut Butter/Jelly and Cheese Sandwich

Toast a piece of Renae’s Sourdough Bread.
Put peanut butter and jelly on
Slice Canal Junction Farmstead Cheese (your choice, they all make for a good addition) onto the sandwich
